Carona Dosa

CARONA DOSA

Cooking Time:- 35 min
Serves:- 15  Carona dosa's
Required Ingredients:-
1. Rice(Uncooked) - 1 Cup
2. Urad dal - 1/2 cup
3. Cumin - 1 Tsp
4. Curry leaves - few
5. Green Chillies - 2 diced into small pieces
6. Cooking soda - 1/2 Tsp
7. Salt - As per Taste
8. Oil- 2 Tbsp
Making:-
1. Take rice and urad dal in a bowl,wash them and soak them in water for 30 min.
2. After 30 min grind it into a smooth batter which looks similar to dosa batter  consistency.
3.Now add cumin,curry leaves,green chillies,cooking soda , salt to it and mix the batter.
4.Now the batter is ready.
Method 1:-
1.Take a nonstick pan and let it heat on the stove
2. Now grease  it with oil and put the 1 spoon batter and dont spread it.
3.pour a tsp of oil from the top and roast it
4.Now when one side is light brown now flip it to the other side and let that side to roast.
5.When both the sides cooked.Our dosa is ready to be served.
Method 2:-
1.Put the batter in the Dosa Machine which is given in the description and let it coo for 5 minutes and then flip it.
2.That's it our dosa is ready.

Crispy onion Samosa

CRISPY ONION SAMOSA

Time Taken - 50 min
Serve - 15 Samosas

Required Ingredients:-
For Samosa Dough

1. Maida or All purpose Flour - 1 cup (approx 100 grams)
2. Atta or Wheat Flour - 1/2 Cup (approx 50 grams)
3. Oil - 2 Tbsp
4. Cooking soda - pinch
5. Salt - 1 Tsp

For Filling 

1. Onion - 2 (finely chopped)
2. Pressed Rice - 2 Tbsp
3. Lemon - 1/2
4. Salt - 1 Tsp
5. Turmeric - 1/4 Tsp
6. Chilli powder - 2 Tbsp
7. Coriander powder - 1 Tbsp
8. Chat Masala - 1 Tsp
9. Jeera Powder - 1/2 Tsp
10. Garam Masala - 1 Tsp
11. Coriander leaves - Few 

Method of Preparation:-

1. First take Maida,Atta,salt and cooking soda and add oil to it.
2. Mix the oil properly with the flour
3. Slowly pour water and knead the flour into a soft chapathi dough.
4. Now Put it aside for 1/2 hour.
5. After 1/2 Hour knead it and make it into small balls.
6. Take each ball and roll it into very thin chapathi.
7. Make all chapathi's and roast them on the pan until they become light in color. Don't let them become brown.Roast all the chapathi's in the same way
8. Now take chapathi,cut the excess edges and keep the excess edges aside.
 9. Cut the chapathi into rectangular sheets.
10.Now take 2 Tbsp Maida add water and make a paste out of it.

For Filling:

1. Add all the spices,Onions,Pressed rice and mix them with hand by pressing them.
2. Now add lemon juice and coriander leaves and keep it aside for 10 min.

Making Samosa:-

1. Take each rectangular sheet fold it put the filling and close it by using maida gum as shown in the video below.
2. Now make all samosa in the same way and keep them ready.
3. Now Heat Oil sufficient to deep fry the samosa.Heat it till it is medium hot and fry the samosa till they become golden brown.
4. Our Samosa are ready to be served  with some fried green chillies.

Badusha

BADUSHA



Time Required To Make: 20 min
Serves: 9 Badusha

Ingredients Required:-

For Badusha

1. All Purpose Flour or Maida - 1 Cup (approx 100gm)
2. Melted Dalda (or) Vanaspathi - 2 Tbsp
3. Cooking Soda - 1/4 Tsp
4. Baking Powder -1/2 Tsp
5.Water 

For Sugar Syrup  

1. Sugar - 1 and 1/2 Cup ( approx 150gm)
2. Cardamom or Elachi - 4
3. Half Lemon
4. Water

For Frying

1. Oil - For Deep Frying

Method of Preparation:

Baadusha

1. In a bowl add maida,cooking soda,baking powder and hot melted dalda in it.Now mix them well        together such that dalda is mixed well with the flour.
2. Now pour water slowly and knead the dough to form a soft dough like chapathi dough.
3. Now cover a wet cloth on the dough and put it aside for 15 min.
4. After 15 min knead the dough again and make small balls out of it.
5. Now take each ball and press it to form the shape of a badusha.Turn it and press at the middle with      light pressure.Repeat this step for atleast 5 times to get the shape.
6.Make all the badusha and put them aside.

Sugar Syrup

1. Put a bowl on the stove and add the sugar and 1/4 cup water.
2. Now stir the sugar until it melts
3.Put the flame at medium and let it melt for 5 minutes
4. After 5 min add the lemon juice and stir.
5. Now let it cook for 3 more minutes and put off the flame.
6. After it cools down add the cardamom seeds,stir it and keep it aside.

Deep Frying

1. Take oil in a pan and heat it till it is medium hot.
2. Now put the Badusha in Oil and fry them until they turn golden brown in color.
3. Now take them out of the oil and immediately put them in sugar syrup.
4. Now pour the sugar syrup onto the Badusha and put them in the syrup for 5 min so that badusha          will absorb the syrup.
5. After 5 min take them into a serving bowl and serve.

TOMATO CHUTNEY

TOMATO CHUTNEY



Name of the Recipe: Tomato Chutney
Preparation Time:-15 min

Required Ingredients:-

1. Tomatoes - 4
2. Green Chillies - 4
3. Crushed Garlic Cloves - 4
4. Curry Leaves - Few
5. Cumin - 1 Tsp
6. Oil - 3 Tbsp
7. Curry leaves -  Few
8. Salt - As per Taste
9. Coriander leaves - Few

Method Of Preparation:-

1.Put a pan on the stove and add 4 chopped tomatoes,chopped green chillies,crushed garlic cloves,fe curry leaves,cumin seeds and oil  into the pan.
2.stir it and fry it for 2 minutes
3. close the lid and let the tomatoes cook for 2 minutes
4.After 2 minutes open the lid and stir it.
5.Now close the lid again and cook for 5 more minutes
6.After 5 minutes let it cook till all the water in the pan is absorbed by the tomatoes for a few minutes.
7.Now add salt to it and stir it.
8. Now turn off the stove and let it cool down
9. After it cooled down grind it and make it as a paste
10.Now our tomato chutney is ready and now transfer it into a serving bowl.
11. Garnish it with Coriander leaves and serve with any kind of tiffins such as dosa,upma,idli,vada and also rice.

PACCHI PULUSU

Name of the Recipe: Pacchi pulusu
Preparation Time:-25 min
Serves : 2 persons

Required Ingredients:-
1. Sesame - 250 grams
2. Tamarind - approx 50 grams
3. Chilli powder - 1 Tbsp
4. Salt - As per taste
5. Sugar - 3 Tbsp
6. White Brinjal ( eggplant)  - 1
7. Chopped onion - 1
8. Coriander leaves - few
9. Oil - 2 Tbsp
10. Mustard seeds,cumin,Urad dal(mixed) - 1Tsp
11. curry leaves - few
12. Red chiilies - 2
13.water - 50ml approx

Method of Preparation:-

1. Put a pan on the stove and roast the sesame seeds till they become golden color on a low flame.
2. Let them cool down and grind them to get a fine powder.
3. Now take a white brinjal and place it on the stove directly. Allow it to roast on the stove top for about 10 minutes and then put it aside till it gets cooled.
4. Now peel the outer layer of the brinjal and put it in the sesame powder.
5. Add chilli powder,tamarind,sugar,salt into this mixture and grind again.
6. Now pour approx 50ml of water into this grinded powder and grind it again to get a liquid like consistency.Now the pulusu (broth)is ready.Transfer it into a serving bowl
7. Now put a small pan on the stove and add oil to it.
8. Let the oil heat.
9. When the oil gets heated add mustard seeds, cumin , urad dal, curry leaves and  red chillies and roast them till they get a golden color and add this to the pulusu
10. Now put some onions in the pulusu and garnish with some coriander leaves.
11. You can have it with aloo bath and any kind of rice item.

Rayalaseema special recipe Aloo Bath




ALOO BATH


Name of the Recipe: Aloo Bath
Preparation Time:-25 min
Serves : 2 persons

Required Ingredients:-
1. Potatoes - 3
2. Carrot - 1
3. Chana Dal - 1 Tbsp
4. Peanuts - 1 Tbsp
5. Red Chilies - 2
6. Mustard seeds,cumin,Urad dal(mixed) - 1Tsp
7. Curry leaves -  Few
8. Sona Masoori Rice - 1 Cup( approx 250 gm)
9. Oil - 4 Tbsp
10. Salt - As per Taste
11. Coriander leaves - Few
12. Turmeric Powder - 1 Tsp
13. Water - 2 cups(approx 500ml)

Method of Preparation:-
1. Put a Nonstick Sauce Pan on the stove and add 4 Tbsp of oil in it.
2. Now add Red chilies and mixture of mustard seeds,cumin.urad dal in it.
3. once the mustard seeds starts splattering add curry leaves,Chana dal and peanuts.
4. Them all the ingredients fry in the oil for 2 minutes.
5. Now cut the potatoes into a medium sized chunks and add them to the pan.
6. Now cut the carrot into small pieces and add them to the pan.
7. Let them fry for a minute and then add 1 Tsp of turmeric powder.
8. Now add water into mixture, add salt as per your taste.
9.Now put the lid on the pot and let the water boil for 10 min.
10.Now when the water is boiled add rice into the pot and stir it.
11.Close the pot with the lid and cook the rice for about 15 min.
12.After 15 min the rice is cooked.Stir it once and transfer it into the serving bowl.
13.Garnish it with coriander leaves and our Aloo Bath is ready
